Antelope Island - Field Trip of Flies











I have mixed feelings about Antelope Island, the views and scenery are very beautiful but the smell and the bugs are a big issue. I covered Samantha and I with bug spray but I was still scraping the bugs off my neck. The knats/flies are outrageous, my car is covered, as I was driving the seven mile stretch out to the island I thought it was raining but it was not rain it was the sound of the bugs hitting my windshield. It was beautiful weather and the wind was blowing just a bit, we hiked the Buffalo Point trail, that is where Samantha found a cave and we saw a few lizards. On the way to the visitors center we saw a Antelope and it's calf, we then learned about brine shrimp , ate lunch then went wading in the Great Salt Lake. (Samantha did with her friends) I sat on a blanket and talked with other parents. Overall it was great weather and a fun field trip, Samantha wants to go back but we will wait till the fall when it is cooler outside.

My daughter is 11, strawberry pie and Mother's Day
















This was a busy week, so busy I can't believe I got through it all. I had soccer games, Kaycee's birthday, Bunco at my house, Kaycee's friend birthday party at the local pool, more soccer games and a talk to give in church on Sunday. Kaycee turned 11 on May 5th, we had a fun week, I made her favorite dinner, we had so much fun swimming with her friends, Nana got her out of school and took her to her favorite restaurant RED ROBIIN for lunch and Kent and I bought her a brand new 24" bike with 21 gears, SHE LOVES IT and rides it all the time.
A lot of people asked for this pie recipe, I make it sugar free so Kent can eat it. Cool Whip and Cream Cheese have very little sugar, the glaze I buy is made with Splenda and I make a homemad pie crust, you can use store bought.

Strawberry Pie Recipe:

Strawberries
Glaze
Cream Cheese
Cool Whip
Let the cream cheese thaw at room temperature, cream the cool whip and cream cheese mixture together and put in bottom of pie crust. Cut strawberries to bite size and mix with very little glaze and put on top of cream cheese mixture. Refridgerate for 1 hour and enjoy.

Kaycee and Season-5k Run











This past Saturday Kaycee and I ran a 5k Run for Kaycee's elementary school. That morning we woke up and realized Kaycee had left her running shoes outside and were soaking wet. I should have had her wear them because the entire time of our race it was a down pour, the wet shoes would have not mattered. Instead she wore her last year Skechers that had no cushion or support, when she finished the race she had blisters on each of her toes. My friend saw us running and said it looked like we had just jumped into a swimming pool and then got out to go for a run. Kaycee and I both finished first in our age groups, she is a natural.
